The tomato (Lycopersicon esculentum Miller) is a commercially significant fruit in the fresh fruit markets as well as the processed food industries throughout the world. This plant is native to Central America, a popular food source with Central and South American Indians. Although the tomato is widely used today, it was not well accepted in Europe or North America not too long ago. North Americans did not accept this fruit into their diet until the late 18th century (Crockett 1979).
